The new 10-acre Windermere Village shopping center is picking up tenants. The latest restaurant concept to agree to a deal is Agave Azul Mexican Restaurant. This will be Agave Azul’s second location. The first store has operated for 11 years in Orlando and offers traditional Mexican dishes with a modern touch.
Owner Juan Rios decided on the new space after seeing many residents of Windermere and Winter Garden come into his restaurant. The 6,000 square foot location will feature a full-service bar, outdoor seating, and space for live entertainment. Rios has worked in the restaurant business since high school and this will be his fifth restaurant. He also currently owns La Fiesta Mexican Restaurant in Port Orange and Ormond Beach and Saint Anejo Mexican Kitchen and Tequileria in Winter Springs.
Some of the most popular dishes from Agave Azul include the Chicken Chipotle, Mahi Fernandez, and Al Pastor Tacos. Carnitas is also a popular meat that is ordered. Rios hopes to start construction on the new restaurant in March, with the opening slated for later in the summer of 2018.
He is also opening a Winter Park location in February and has plans to bring Agave Azul to Maitland in 2019.
